I love summer :) One of my favorite summer foods would be the delicious little watermelon. Who knew water could taste so good! I was thrilled to see two of my favorite things show up on Cinema & Spice this week :) Watermelon and Dirty Dancing. So the recipe is super easy! I did find the flavor was a bit strong for me so I think I’m going to dial it down a little bit next time.

“I Carried A Watermelon Salad”
Ingredients: (*I missed a few at the store so I substituted a few things)
3 baby watermelons, cubed with no rind (I used two)
3 persian cucumbers, chopped (I used one large cucumber cause that’s all I had in my fridge)
15 basil leaves, torn
9 oz. feta cheese (I used 6 oz)
1/3 cup green onions, finely sliced into rings (I used 1/2 of a white onion)
3 tablespoons olive oil
1 teaspoon salt (I used sea salt)
3 cloves of garlic, minced
2 tablespoons apple cider vinegar
6 watermelon halves (I used 4)
Directions:
The first step is to make your dressing. We recommend using a jar so that you can easily shake the dressing (and keep any leftovers!). Combine the garlic, vinegar, salt, and olive oil. Shake well and set aside. In an ideal world, you make the dressing a few hours ahead so it has time to develop more flavor, but if you’re in a watermelon hurry, you can move onto the next step immediately.
In a large bowl, combine the cubed watermelon, torn basil, and sliced green onions and cucumbers and toss with the dressing. Just before serving, cut the cheese (hehe) into small cubes and toss into the salad.

My Notes: I took the little watermelon bowls and cut triangle out along the edge to make them scalloped :) I also scooped the watermelon out with a melon baller so I had cute little watermelon balls to put back in.
